ABOUT THIS DISTILLERY

Hali’imaile Distillery sits on Maui’s upcountry slopes at 883 Haliimaile Road in Makawao, occupying what was once pineapple plantation land in the historic Hali’imaile town. Founded by Samantha Kachman in 2016, this is Maui’s first legal distillery since Prohibition. Kachman, who left a career in hospitality to chase her distilling dreams, partnered with local farmers and sugar cane growers to create spirits that capture the essence of Hawaiian terroir. The operation produces vodka, gin, and rum using locally sourced ingredients including Maui Gold pineapple, Hawaiian sugar cane, and mountain spring water filtered through volcanic rock. The facility combines modern distillation equipment with Hawaiian agricultural traditions, creating spirits that reflect the island’s unique climate and soil conditions. Kachman’s vision was simple but ambitious – prove that world-class spirits could be made entirely from Maui ingredients while supporting local agriculture and creating something authentically Hawaiian rather than just made in Hawaii.

WHAT SETS THEM APART

This is Hawaii’s first distillery to focus exclusively on spirits made from locally grown ingredients, not just local production using mainland grains. Every bottle starts with Maui-grown sugar cane, Maui Gold pineapples, or other island-sourced botanicals, filtered through volcanic spring water that’s been naturally purified through miles of lava rock. The location itself tells Hawaii’s agricultural story – you’re tasting spirits made on land that once grew pineapple for Dole, now transformed into a craft distillery that’s bringing agriculture full circle. Unlike mainland craft distilleries that might use local grains as a marketing hook, Hali’imaile’s entire identity depends on hyperlocal sourcing, making each bottle a liquid representation of Maui’s terroir.

THE VISITOR EXPERIENCE

You’ll taste spirits while looking out over the same fields where some of the ingredients were grown, with views stretching toward Haleakala. The tasting room feels like an upscale plantation house – open, airy, with local wood and plenty of natural light. Tours take you through the production facility where you can see the fermentation tanks and copper stills, and Samantha or her team will explain how they work directly with local farmers to source ingredients. The tastings focus on understanding how each spirit captures different aspects of Maui agriculture – the pineapple vodka tastes like liquid sunshine, while their rum showcases the complexity possible when you control every step from sugar cane field to bottle.

IS IT WORTH VISITING

If you’re interested in agricultural tourism or want to understand how place impacts flavor, this is essential. You’re not just tasting spirits – you’re tasting Maui itself, distilled. It appeals to people who care about provenance and local production, especially those who want to support authentic Hawaiian businesses rather than corporate operations with Hawaiian marketing. The experience won’t blow away serious whiskey drinkers looking for aged brown spirits, since the focus is on white spirits and rum. But for anyone curious about hyperlocal production or looking for unique bottles that can’t be found anywhere else, it’s exactly what you came to Hawaii to discover.

⚠️ VISITING TIPS

Call ahead or check their website for current hours and tasting availability, as they’re a small operation that sometimes closes for production or local events. The drive up to Makawao is beautiful but can be winding, so allow extra time. Ask specifically about their seasonal releases – they sometimes create limited batches using ingredients that are only available during certain harvest times. If you’re interested in the agricultural side, ask about their farmer partnerships and ingredient sourcing. The best time to visit is mid-morning through early afternoon when natural light shows off the views and the staff has more time to talk about their process.

FREQUENTLY ASKED QUESTIONS

Hali’imaile Distillery Tour & Tasting Room — Visitor FAQ

Do you really use only Maui ingredients?
Yes, all their primary ingredients come from Maui – the pineapples, sugar cane, and botanical elements are locally sourced. Even their water is Hawaiian spring water filtered through volcanic rock. This isn’t just marketing – it’s their entire business model.
How long does a tasting take?
Plan on 30-45 minutes for a full tasting experience. If you add the production tour, allow about an hour total. The staff likes to explain the agricultural story behind each spirit, so it’s more educational than a quick sample.
Can I buy bottles that aren’t available elsewhere?
Absolutely. Many of their spirits are only available at the distillery or select Maui locations. Their seasonal releases using limited local harvests are especially exclusive to on-site sales.
