ABOUT THIS DISTILLERY

Adirondack Mountains Meet Engineering Precision

Gristmill Distillers sits along scenic Route 73 in Keene, New York, right in the heart of the Adirondacks. Founded by Jim and Susan Hayward in 2014, this small-batch operation grew from Jim’s decades-long passion for distilling that started as a hobby in his garage. The couple transformed a 1,200-square-foot building into their distillery after Jim retired from his engineering career, bringing his technical precision to craft spirits production. They focus on vodka, gin, and seasonal specialties using New York State grains and botanicals sourced from the Adirondack region. The operation runs on a 250-gallon copper still that Jim helped design, reflecting his engineering background in every detail of the process. Susan handles the business side while Jim manages production, creating a true husband-and-wife team that visitors immediately notice when they walk through the door. The distillery opened to the public in 2015, becoming one of the first craft distilleries in the northern Adirondack region and helping establish the area’s growing spirits scene.

WHAT SETS THEM APART

Wild Foraged Botanicals From Mountain Wilderness

What sets Gristmill apart is its combination of engineering precision and Adirondack terroir. Jim’s background as a mechanical engineer shows in every aspect of their production—from the custom-designed still system to the meticulous temperature controls throughout fermentation. They’re one of the few distilleries in the region using 100% New York State grains, working directly with farms within a 50-mile radius. Their botanical sourcing program includes wild foraged ingredients from the Adirondack wilderness, creating gins with flavors you won’t find anywhere else. The location itself matters too—they’re operating at elevation in mountain air that affects aging and flavor development differently than distilleries at sea level.

THE VISITOR EXPERIENCE

Personal Tours From The Actual Distillers

You’ll walk into a compact but efficient space where Jim or Susan usually greets visitors personally. The tasting room occupies half the building, with the production area visible through large windows so you can watch the actual distilling process during operating hours. Tours are intimate affairs, typically just a handful of people, where Jim explains the technical aspects of distillation while Susan shares stories about building the business from scratch. The mountain setting means you’re tasting spirits while looking out at actual Adirondack peaks, not just reading about them on a label. The space feels more like visiting someone’s well-organized workshop than a slick commercial operation.

IS IT WORTH VISITING

Perfect Adirondack Road Trip Addition

If you’re driving through the Adirondacks and appreciate small-scale craftsmanship, this is worth the stop. You’re not going to get the elaborate visitor center experience of larger distilleries, but you will get direct access to the people making the spirits and genuine insight into small-batch production. It’s perfect for spirits enthusiasts who want to understand the technical side of distilling, since Jim loves talking shop about temperatures, cuts, and botanical extraction. Families with younger kids might find it less engaging since there’s not much beyond the tasting and production tour. The mountain location makes it a natural addition to an Adirondack road trip rather than a destination by itself.

⚠️ VISITING TIPS

Call ahead before making the drive since hours can be irregular, especially during winter months when weather affects operations. The Route 73 location is straightforward to find, but GPS can be spotty in the mountains so pay attention to road markers. If you’re interested in their seasonal releases, visit during fall when they’re typically bottling their limited autumn gin with foraged Adirondack botanicals. Ask Jim about the still design—he’s proud of the engineering work and can explain details that most distillery tours skip over. Parking is limited to a few spots right in front of the building, but it’s rarely crowded enough to be an issue.

FREQUENTLY ASKED QUESTIONS

Gristmill distillers, inc. — Visitor FAQ

Do you need reservations for tastings and tours?
Reservations aren’t required, but calling ahead is smart since this is a small operation and hours can vary, especially during winter months. Jim and Susan handle everything themselves, so if they’re in the middle of distilling or off-site, you might find the place closed.
What makes your gin different from other craft distilleries?
They forage wild botanicals from the Adirondack wilderness, including native juniper and seasonal herbs that most distilleries can’t access. The exact botanical mix changes slightly with each batch based on what’s available that season, making each bottle unique to the time and place it was made.
Can you see the actual distilling process during tours?
Yes, the production area is visible from the tasting room, and if they’re distilling during your visit, Jim will often walk you through what’s happening in real-time. His engineering background means you’ll get technical details about temperatures and cuts that most distillery tours don’t cover.
