ABOUT THIS DISTILLERY

An Engineer's Approach to Small-Batch Spirits

Gompers Distillery and Speakeasy operates out of a 5,000-square-foot facility in Redmond’s industrial district, where husband-and-wife team Steve and Connie Gompers have been crafting small-batch spirits since 2014. Steve brings a mechanical engineering background to the operation, while Connie handles the business side—a combination that shows in their methodical approach to distilling. They produce bourbon, rye, vodka, and gin using a 500-gallon copper pot still alongside smaller 50-gallon stills for experimental batches. The Gompers started this venture after Steve’s retirement from aerospace engineering, driven by his fascination with the science behind fermentation and distillation. What began as a hobby in their garage evolved into a licensed operation when they realized their bourbon was consistently impressing friends and neighbors. They spent three years navigating Oregon’s regulatory landscape before opening their doors, learning distilling techniques through trial, error, and consultation with established craft distillers across the Pacific Northwest. The speakeasy portion isn’t just marketing—they’ve created an authentic 1920s atmosphere complete with period furnishings, jazz music, and cocktails made exclusively with their own spirits. You’ll find Steve behind the bar most evenings, mixing drinks and explaining their distilling process to anyone curious enough to ask. The space feels more like a private club than a typical tasting room, with dim lighting, leather seating, and walls lined with aging barrels that fill the room with the scent of oak and vanilla.

WHAT SETS THEM APART

Science Meets Speakeasy In Industrial Oregon

Steve’s engineering background shows up in unexpected ways throughout their operation. He’s modified their still configuration with custom copper fittings and precise temperature controls that allow for incredibly consistent cuts during distillation. Rather than rushing products to market, they’ve focused on perfecting their recipes—their bourbon spends a minimum of two years in new American oak, while their rye gets three years. The speakeasy concept isn’t just aesthetic either; they’re one of the few distilleries in Central Oregon that operates as both production facility and cocktail lounge, staying open evenings specifically for drinks rather than just daytime tours and tastings.

THE VISITOR EXPERIENCE

Tours by Day Cocktails by Night

Steve typically runs the tours himself, walking you through their production process with the enthusiasm of someone who genuinely loves explaining the science behind each step. The hour-long experience covers everything from grain selection to barrel aging, with plenty of opportunities to smell and taste at different stages. The speakeasy experience is completely different—dimly lit and intimate, with Connie crafting cocktails using their house spirits while period jazz plays in the background. You’re not just tasting spirits; you’re experiencing them in carefully crafted drinks that showcase what each one does best.

IS IT WORTH VISITING

Worth Finding in Redmond's Back Streets

This place works best for people who appreciate the technical side of distilling and don’t mind a more intimate, personal experience over polished production. Steve’s willingness to geek out about fermentation temperatures and distillation cuts makes this ideal for spirits enthusiasts who want to understand the process, not just sample the results. The speakeasy atmosphere in the evenings offers something genuinely different from typical tasting rooms—actual craft cocktails in an authentic setting rather than just shots with a chaser. If you’re looking for a big, slick operation with corporate polish, this isn’t it. But if you want to meet the people making your spirits and understand their process, it’s exactly right.

⚠️ VISITING TIPS

Call ahead for tours since Steve often runs them solo and needs to plan around production schedules. The speakeasy operates Thursday through Saturday evenings, and while reservations aren’t required, the intimate space fills up quickly on weekends. Try their bourbon neat first, then ask Steve to make you an Old Fashioned with it—the difference showcases why they designed it specifically for cocktails. The location in Redmond’s industrial area can be tricky to find; look for the discrete sign and don’t expect much curb appeal from the outside. Park anywhere in front of the building.

FREQUENTLY ASKED QUESTIONS

Gompers Distillery and Speakeasy — Visitor FAQ

What’s the difference between the daytime tours and evening speakeasy?
Tours focus on the production process and tasting spirits neat to understand their profiles. The speakeasy is all about experiencing their spirits in properly crafted cocktails in a 1920s atmosphere. Both are run by Steve and Connie personally, just with different focuses.
Do you need reservations for the speakeasy?
Reservations aren’t required, but the intimate space only seats about 20 people comfortably. Thursday nights are usually quieter, while weekends can fill up by 8PM. Calling ahead helps, especially for groups larger than four.
What makes your bourbon different from other craft distilleries?
Our mash bill uses wheat instead of rye as the flavoring grain, creating a smoother profile designed specifically for cocktails rather than just sipping neat. Steve’s engineering background also shows in our precise temperature controls and custom still modifications that create more consistent cuts during distillation.
