Gold Dirt Distillery sits at 41 Main Street in Rollinsville, Colorado, a tiny mountain town about 45 minutes west of Boulder. Founded by husband and wife team Denny and Diane Eckstein, who opened their doors in 2017 after years of homebrewing and distilling experience. The operation runs out of a converted building right on Main Street, where they produce vodka, gin, whiskey, and rum using locally sourced Colorado grains and mountain water. Denny handles the production side while Diane manages the business operations and tasting room. The Ecksteins didn’t set out to become distillers – Denny worked in construction while Diane had a background in hospitality. They started making spirits as a hobby before realizing they could turn their passion into something more substantial in Rollinsville, a historic mining town that’s seen new life as outdoor enthusiasts discover the area. The town itself sits at about 8,400 feet elevation, which affects their aging process and gives their spirits some unique characteristics you won’t find at sea level distilleries.
