ABOUT THIS DISTILLERY

Jersey's Craft Spirits Pioneer in Action

Garden State Distillery sits in downtown Toms River, New Jersey, where founders Bill Tambussi and George Dedes turned their shared passion for craft spirits into a full-scale distillery operation in 2013. The duo, both with backgrounds in hospitality and business, saw an opportunity to bring artisanal distilling to Ocean County and spent two years navigating permits and perfecting recipes before opening their doors. Their 3,000-square-foot facility houses a custom copper still system and produces vodka, gin, bourbon, and seasonal spirits in small batches. Tambussi and Dedes didn’t just want to make spirits—they wanted to create a gathering place where people could see the entire process from grain to glass. The distillery operates with a hands-on approach, with the founders often on-site explaining their techniques and sharing stories about their journey from concept to production. They source corn from local New Jersey farms when possible and age their bourbon in charred oak barrels stored on-site, creating a true grain-to-glass operation in the heart of the Garden State. Visitors can watch the distillation process through large windows, taste spirits directly from the source, and buy bottles that were literally made in the room next door. The space feels more like a working laboratory than a tourist attraction, with fermentation tanks, bottling equipment, and aging barrels creating an authentic production atmosphere. It’s the kind of place where you’ll learn something new about distilling while enjoying spirits that couldn’t be made anywhere else.

THE VISITOR EXPERIENCE

Working Distillery Where Founders Still Distill

You’ll step into an active production facility where the smell of fermenting grains and copper stills creates an authentic distillery atmosphere. Tours typically include watching the mashing and fermentation process, seeing the copper still in action, and tasting spirits directly from barrels and tanks. The founders or their team lead most visits personally, offering insights into recipe development and the challenges of starting a distillery in New Jersey. The tasting room showcases their full range of spirits with detailed explanations of production methods and flavor profiles. You can purchase bottles immediately after tasting, often signed by the distillers who made them.

IS IT WORTH VISITING

Real Education Over Tourist Polish

This appeals most to spirits enthusiasts who want to understand the craft distilling process and support local New Jersey producers. You’ll get genuine educational value and taste spirits that reflect regional character, but don’t expect polished tourist amenities or elaborate facilities. It’s better for curious drinkers who appreciate authentic, small-scale production over flashy presentation. The personal attention from founders makes it worthwhile for anyone interested in the business side of craft distilling. If you prefer large-scale operations with extensive tours and restaurants, this intimate setting might feel too basic.

⚠️ VISITING TIPS

Call ahead to schedule visits since they’re a working distillery with limited public hours and small batch production schedules. Weekend afternoons tend to offer the best chance of seeing active distillation. Ask specifically about their bourbon aging process and local ingredient sourcing—these are areas where the founders really shine in their explanations. Parking is available on Washington Street, but downtown Toms River can get busy on weekends. Try their gin if you’re usually a whiskey drinker; their botanical selection showcases New Jersey’s agricultural diversity in unexpected ways.

FREQUENTLY ASKED QUESTIONS

Garden State Distillery — Visitor FAQ

Do I need to book ahead for tours and tastings?
Yes, since they’re actively producing spirits and have limited staff, calling ahead ensures someone will be available to show you around. Weekend afternoons are usually best for extended visits and seeing production in action.
What makes their spirits distinctly New Jersey?
They source corn from local farms when possible and their Pine Barrens Gin uses botanicals that reflect the state’s unique Pine Barrens ecosystem. The founders specifically wanted to create spirits that couldn’t be made anywhere else but New Jersey.
Can I see spirits being made during my visit?
It depends on their production schedule, but they often time tours to coincide with active distillation. Even when the stills aren’t running, you’ll see fermentation tanks working and learn about their small-batch process from the people who actually make the spirits.
