ABOUT THIS DISTILLERY

Texas's First Island Distillery Experience

Galveston Distilling Co sits on Market Street in Galveston’s historic district, making it Texas’s first distillery on an island. Founded in 2015 by husband-and-wife team Paul and Tammy Mikla, the operation started after Paul retired from a career in corporate finance and decided to chase his passion for craft spirits. They chose Galveston specifically for its unique maritime climate, believing the Gulf Coast humidity and salt air would create distinctive aging conditions for their whiskeys. The 3,000-square-foot facility houses custom copper stills and produces bourbon, rye whiskey, vodka, and rum. The Miklas spent two years navigating local regulations to become Galveston’s first legal distillery since Prohibition. Paul, who had been home-distilling as a hobby for years, brought in master distiller expertise while Tammy handles operations and marketing. Their philosophy centers on small-batch production with local ingredients when possible – they source Texas corn and use Galveston’s mineral-rich water in their mash. The couple wanted to create something that reflected the island’s maritime heritage while producing spirits that could compete with established mainland distilleries. Visitors walk into a working distillery where you can see the entire process from grain to bottle. The tasting room feels more like someone’s well-appointed garage than a polished tourist destination, which works in its favor. You’re tasting spirits while watching Paul or his team actually working the stills just feet away. The maritime influence isn’t just marketing talk – the constant Gulf humidity and temperature swings genuinely affect how their spirits age, creating flavor profiles you won’t find in traditional Kentucky warehouses.

WHAT SETS THEM APART

Gulf Coast Humidity Changes Everything

This is Texas’s only island distillery, and that geography matters more than you’d expect. The Gulf Coast’s constant humidity and temperature fluctuations accelerate aging and create different extraction patterns from the oak barrels compared to traditional inland aging. Their bourbon develops deeper caramel notes faster, while their rye takes on a softer, rounder character than typical rye whiskeys. Paul Mikla sources Texas-grown corn when possible and uses Galveston’s naturally mineral-rich water, which adds subtle salinity to the final products. The operation is genuinely small-batch – they’re producing maybe 1,000 bottles per month across all their spirits, so you’re tasting stuff that hasn’t been scaled up for mass production.

THE VISITOR EXPERIENCE

Meet the Makers In Their Element

Paul or Tammy usually run the tastings themselves, so you’re getting stories directly from the founders rather than scripted tours. The space feels intimate – maybe a dozen people max – and you can watch the actual production happening during your visit. They’ll walk you through their four core spirits, explaining how the island climate affects each one differently. The tasting focuses on understanding how their maritime aging creates different flavor profiles, with Paul often pulling samples directly from barrels to show the progression. It’s more educational than flashy, perfect if you want to understand the craft rather than just drink.

IS IT WORTH VISITING

Unique Maritime Aging Worth the Trip

If you’re interested in craft spirits and want to see something genuinely different, absolutely. The maritime aging angle isn’t marketing fluff – their spirits really do taste different because of where they’re made. This appeals most to whiskey enthusiasts curious about terroir and people who enjoy meeting the actual makers. Don’t expect a polished tourist experience like you’d get at larger distilleries. The charm is in the authenticity and the unique products, not Instagram-worthy settings. Casual drinkers might prefer something with more bells and whistles, but spirits geeks will love the direct access to the distillers and the chance to taste something truly unique to this location.

⚠️ VISITING TIPS

Call ahead or check their Facebook page before visiting – they’re a small operation and sometimes close for production or local events. Parking is street parking on Market Street, which can get tight during Galveston’s tourist season. Ask Paul about the barrel aging experiments – he’s often testing different char levels and wood types to see how they interact with the Gulf climate. Try their bourbon and rye side-by-side to really understand the maritime influence. Don’t expect a long, drawn-out tour – the whole experience is maybe 45 minutes, but it’s dense with actual information about the distilling process.
