ABOUT THIS DISTILLERY

A Master Distiller's Personal Workshop

Ernest Scarano Distillery sits on Rice Street in Elmore, Ohio, a small town about 20 miles southeast of Toledo. Ernest Scarano founded this operation in 2016, bringing decades of experience as a master distiller who previously worked at several Kentucky distilleries before deciding to strike out on his own in northern Ohio. The distillery operates out of a renovated 1920s industrial building that Scarano spent two years converting into a full production facility, complete with custom copper stills and temperature-controlled aging rooms. Scarano’s journey to opening his own distillery wasn’t straightforward—he spent nearly a decade perfecting his recipes while working for other operations, always planning to eventually create his own signature bourbon and rye whiskeys. The decision to locate in Ohio rather than traditional whiskey country was intentional, as Scarano wanted to be part of the growing craft distilling movement in the Midwest. He handles most of the production himself with help from a small team, focusing on small-batch runs that allow for careful quality control at every step. The distillery produces primarily bourbon and rye whiskey, though they also craft a corn whiskey and seasonal gin. Visitors can tour the production floor, see the 500-gallon copper pot still in action, and taste through their current lineup in a converted warehouse space that maintains the industrial character of the original building. Scarano often leads tours himself when he’s not in production, sharing stories about the craft and his particular approach to aging spirits in Ohio’s variable climate.

WHAT SETS THEM APART

Kentucky Experience Meets Ohio Innovation

Ernest Scarano Distillery stands out for being one of the few operations in northern Ohio where the master distiller is also the owner and primary tour guide, giving visitors direct access to the person making the whiskey. Scarano’s background includes time at established Kentucky distilleries, but his approach here focuses on adapting traditional techniques to Ohio’s climate, using the temperature swings to his advantage in aging. The operation runs on a genuinely small scale—their main still produces about 100 gallons per batch, and they age everything on-site in full-size barrels rather than taking shortcuts with smaller cooperage that some craft operations use.

THE VISITOR EXPERIENCE

No Corporate Polish Just Real Craft

Tours at Ernest Scarano Distillery feel more like visiting a working craftsman’s shop than a polished tourist destination. You’ll walk through the production area where Scarano or one of his assistants explains the mashing, fermentation, and distillation process, often with equipment actively running. The space smells like grain and oak, and you can see the relatively small scale of everything—this isn’t a factory operation. Tastings happen in a simple tasting room area within the main building, where you’ll try three or four of their current spirits while learning about Scarano’s specific aging philosophy and how Ohio’s climate affects the whiskey.

IS IT WORTH VISITING

Authentic Small Batch Worth the Drive

This distillery appeals most to whiskey enthusiasts who want to understand the nuts and bolts of small-scale production and don’t need elaborate visitor amenities. You’re getting access to a legitimate craft operation where the person making the whiskey is likely the person showing you around, which is rarer than you’d think. It’s not the place for large groups or people expecting a polished corporate experience—the appeal is in the authenticity and the chance to taste whiskey that’s genuinely made in small batches by someone who’s been perfecting the craft for years.

⚠️ VISITING TIPS

Call ahead to schedule tours and tastings, as Scarano often runs the place single-handedly and needs to work around production schedules. Weekend afternoons are usually your best bet for availability, but weekday visits might get you more one-on-one time if he’s not distilling that day. The building can be a bit tricky to find—look for the address numbers on Rice Street rather than relying on signage. Ask specifically about their bourbon aging process and how they handle Ohio’s temperature swings, as this is where Scarano’s experience really shows. If you’re interested in purchasing bottles, call ahead to check what’s currently available, as their small production runs sell out regularly.

FREQUENTLY ASKED QUESTIONS

Ernest Scarano Distillery — Visitor FAQ

Do I need to make a reservation for tours and tastings?
Yes, reservations are required since this is a small operation often run by Ernest himself. He needs to schedule around production times and can’t accommodate walk-ins reliably. Call ahead to check his availability, especially on weekends.
What’s included in the tasting?
The tasting includes three to four of their current spirits—typically their bourbon, rye whiskey, and corn whiskey when available. Ernest or his team explains the production process and how their techniques affect flavor development.
Can I buy bottles to take home?
Yes, they sell their spirits on-site, but availability varies since they produce in small batches. Their bourbon and rye whiskey are the most consistently available, but it’s worth calling ahead if you’re looking for something specific.
