Dry Point Distillers sits in an industrial complex in Las Cruces, New Mexico, where the desert heat actually works in their favor for aging spirits. Founded by husband-and-wife team Matt and Jennifer Salopek in 2018, this small operation started when Matt’s homebrewing hobby evolved into something bigger during his time as a software engineer. Jennifer brought business acumen from her corporate background, and together they decided to chase the dream of crafting spirits in the Land of Enchantment. The distillery operates out of a modest 2,000-square-foot space, where they produce vodka, gin, and whiskey using locally sourced ingredients when possible. Their 250-gallon copper still, affectionately named “Copper Betty,” handles all production in small batches that reflect the founders’ attention to detail.
