Downtown Baraboo Distillery In an 1800s Building

Driftless Glen Distillery sits right in downtown Baraboo, housed in a restored 1800s building that once served the community in completely different ways. Bartley Blume founded this operation in 2012 after years in the restaurant business, deciding Wisconsin needed more than just beer and cheese to put it on the craft spirits map. The name comes from the Driftless Area, that unique geological region that somehow escaped the last ice age’s glacial flattening. You’ll find them producing everything from bourbon to gin using locally sourced grains when possible, with a 500-gallon copper still doing most of the heavy lifting. The whole operation reflects Blume’s philosophy that good spirits should tell the story of where they’re made, not just follow some distant tradition.

Wisconsin-Grown Grains Direct from Local Farms

They’re doing something pretty uncommon by focusing heavily on Wisconsin-grown grains for their mash bills, working directly with farmers in the region to source corn, wheat, and rye. The building itself adds character – those thick limestone walls from the 1800s create natural temperature control that affects aging. Their bourbon uses a wheated recipe that’s softer than most, and they’re experimenting with different barrel chars to see how it plays with Wisconsin’s temperature swings. The small scale means Blume can actually taste every batch before it goes out the door.

Tastings happen right at the bar where they’ll pour samples of whatever they have ready, from their flagship bourbon to seasonal experiments. The staff actually knows what goes into each bottle because they probably helped make it.
