Do Good Spirits sits right in downtown Roscoe, New York, in what used to be an old commercial building on Union Street. Founded by husband-and-wife team Matt and Jen Jager in 2017, this small operation grew out of Matt’s home brewing hobby that spiraled into something much bigger. The couple had been running a successful catering business when they decided to pivot completely into distilling, converting their downtown space into a working distillery and tasting room. They focus on small-batch bourbon, rye, and vodka, with everything made on-site using traditional copper pot stills.
Matt handles the production side while Jen manages the business operations and visitor experience. They’ve built their reputation slowly, focusing on quality over quantity and building relationships with locals and visitors who stumble into their cozy tasting room. The distillery reflects their philosophy of keeping things simple and authentic—no flashy marketing or grand claims, just solid spirits made with care. They source their grains from regional farms when possible and age their whiskeys in full-size barrels despite their small scale.
The space feels more like visiting friends than touring a commercial operation. You’re tasting spirits while standing just feet from where they’re made, and Matt or Jen will often walk you through their process personally. The intimate scale means you’re not just sampling spirits—you’re hearing stories about specific batches, learning about their mistakes and successes, and getting honest opinions about what’s working and what isn’t. It’s the kind of authentic experience that’s getting harder to find as craft distilling grows.
