ABOUT THIS DISTILLERY

Hill Country Ranch That Makes Serious Whiskey

Dietz Distillery sits on a 40-acre property along US Highway 87 just south of Fredericksburg, where husband-and-wife team Steve and Carol Dietz turned their retirement dream into reality in 2019. Steve, a former petroleum engineer, and Carol, who worked in healthcare administration, decided to pivot completely after years of home distilling as a hobby. They built their operation from scratch on land that was previously part of a cattle ranch, creating a modern facility that produces bourbon, rye whiskey, and vodka using locally sourced Texas grain whenever possible. The Dietzes didn’t just jump into distilling blindly. Steve spent years perfecting his craft through online courses and hands-on learning, eventually earning his master distiller certification before they broke ground. The facility houses a 250-gallon copper pot still manufactured by Vendome Copper & Brass Works, the same company that builds equipment for major Kentucky distilleries. They’re focused on small-batch production, typically running about 20 barrels at a time, which allows them to maintain tight quality control and experiment with different mash bills and aging techniques. What you’ll find here is a no-nonsense operation run by people who genuinely love what they’re doing. The tasting room overlooks the production floor, so you can watch the actual distilling process while sampling their spirits. Steve often runs tastings himself, and he’s happy to get into the technical details of their process if you’re interested. The property has that working ranch feel with plenty of space to spread out, and they’ve built a covered outdoor area where they host events and live music on weekends.

WHAT SETS THEM APART

Petroleum Engineer Turned Master Distiller

Dietz Distillery stands out because it’s genuinely owner-operated by two people who walked away from successful careers to chase this dream in their 60s. Steve Dietz does everything from mashing to bottling, and Carol handles the business side and tasting room operations. They’re not trying to be the biggest or flashiest operation in Texas—they’re focused on making solid spirits using traditional methods with their modern equipment. Their bourbon uses a high-rye mash bill that Steve developed over years of experimentation, and they age everything in full-size 53-gallon barrels rather than smaller cooperage that speeds up the process. The location itself is pretty unique for a distillery—40 acres of former ranch land where you can actually see the Hill Country landscape rather than being tucked into an industrial park.

THE VISITOR EXPERIENCE

No Tour Groups Just Real Conversations

Tours and tastings happen in their main building where the production area is separated from the tasting room by large windows, so you’re watching the actual operation while you sample. Steve or Carol typically handle visitors personally, which means you’re getting information straight from the people who make the decisions about recipes and processes. The tasting room has a rustic but comfortable feel with wooden tables and bar seating, and the covered outdoor area offers Hill Country views. During tastings, they’ll pour their current releases and often let you try something straight off the still if timing works out. The whole experience feels more like visiting friends who happen to make whiskey rather than a polished tourist operation.

IS IT WORTH VISITING

Genuine Craft Without The Tourist Crowds

If you’re looking for a genuine small-batch distillery experience without the crowds, Dietz delivers. This isn’t a destination for people wanting Instagram moments or elaborate cocktail programs—it’s for folks who want to understand how whiskey gets made and taste spirits that reflect the distiller’s personal vision. Steve’s engineering background shows in how methodical and precise their operation is, and both he and Carol can answer pretty much any question you throw at them about their process. The spirits are solid, especially considering they’ve only been aging for a few years, and the bourbon shows real promise as it develops more time in the barrel. You won’t find tour groups of 30 people here, which is either perfect or disappointing depending on what you’re after.

⚠️ VISITING TIPS

Call ahead or check their Facebook page before driving out—they’re often open weekends but hours can vary depending on production schedules and events. The GPS will get you there, but keep an eye out for their sign since it’s easy to miss among the other rural businesses along Highway 87. If you’re genuinely interested in distilling, ask Steve about their process and equipment—he’s got plenty of stories about the learning curve and challenges of getting licensed in Texas. Try their bourbon and rye side by side to taste the difference in mash bills, and don’t skip the vodka if you’re into clean, neutral spirits. They usually have bottles available for purchase, but selection depends on what they’ve got ready. Parking is never an issue with all that ranch space.
