ABOUT THIS DISTILLERY

Industrial Buffalo Warehouse Making Honest Whiskey

Buffalo Distilling Company sits in a converted warehouse space on Seneca Street in Buffalo’s industrial corridor, bringing craft spirits production back to a city with deep distilling roots. Founded by Mike Beehler and Dave Peters in 2017, the distillery emerged from their shared passion for craft beer and spirits after years of homebrewing together. Both men left corporate careers—Beehler from finance and Peters from engineering—to pursue their vision of creating quality spirits that reflect Buffalo’s blue-collar spirit and industrial heritage. The operation centers around a custom 500-gallon copper pot still system that allows them to produce bourbon, rye whiskey, and rum in small batches. Beehler serves as head distiller while Peters manages operations, and they’ve built their approach around traditional techniques with modern precision. The distillery sources grains locally when possible and ages their whiskeys in full-size barrels despite their smaller production scale, believing this approach creates better flavor development than the quarter-barrels many craft distilleries use. Visitors find a working distillery first and tasting room second, with exposed brick walls, concrete floors, and the constant hum of fermentation tanks creating an authentic industrial atmosphere. You can watch the entire production process during tours, from mashing and fermentation through distillation and barrel filling. The space feels unpretentious and genuine—exactly what you’d expect from two guys who left desk jobs to make whiskey in Buffalo.

WHAT SETS THEM APART

Full-Size Barrels Despite Small Batches

Buffalo Distilling stands out for its commitment to full-size barrel aging despite being a small craft operation, a choice that significantly increases costs but creates more complex flavor profiles than the smaller barrels most craft distilleries use. The founders’ engineering and finance backgrounds show in their meticulous approach to process control and quality consistency, treating each batch like a carefully managed project rather than relying purely on intuition. They’re also working to revive Buffalo’s historical connection to distilling—the city was a major whiskey producer in the 1800s before Prohibition killed the industry. Their location in Buffalo’s industrial corridor isn’t scenic, but it’s authentic to the city’s working-class character and allows them to focus resources on equipment and ingredients rather than premium real estate.

THE VISITOR EXPERIENCE

Two Founders Who Actually Run Everything

Tours are intimate affairs with either Mike or Dave personally walking you through their operation, explaining everything from grain selection to the science behind their cuts during distillation. The warehouse setting means you’ll smell the sweet corn mash and hear the bubbling fermentation tanks while learning about their process. Tastings happen right at the bar they built themselves, featuring their current bourbon and rye releases along with some experimental spirits they’re developing. The atmosphere is conversational rather than formal—these guys genuinely enjoy talking about their craft and will happily dive deep into technical details if you’re interested. The whole experience takes about 45 minutes and feels like visiting friends who happen to make excellent whiskey.

IS IT WORTH VISITING

No Frills Just Great Whiskey Stories

If you appreciate authentic craft distilling without the bells and whistles, Buffalo Distilling delivers a genuine behind-the-scenes experience. This isn’t a polished destination distillery with gift shops and restaurants—it’s a working operation where you can actually learn about the distilling process from the people doing it. Whiskey enthusiasts will appreciate tasting spirits from a distillery that prioritizes traditional methods over marketing, while casual visitors get an honest look at what small-batch distilling actually involves. The location isn’t touristy, but that’s part of the appeal for anyone wanting to see craft distilling in its natural habitat rather than a sanitized visitor center.

⚠️ VISITING TIPS

Call ahead or check their website before visiting since hours can vary around production schedules and they sometimes close for private events. The location on Seneca Street is in an industrial area that GPS handles well, but look for the small signage on the warehouse building. Tours are better on weekends when both founders are usually available and production activity is visible. Ask about their aging process and barrel selection—they’re proud of their decision to use full-size barrels and can explain why it matters. Don’t expect a fancy retail experience, but they do sell bottles when available. Parking is easy with space right outside the building.

FREQUENTLY ASKED QUESTIONS

Buffalo Distilling Company — Visitor FAQ

Do I need to book tours in advance?
Yes, you should call ahead or check their website since tours depend on production schedules and staff availability. They prefer advance notice to ensure either Mike or Dave can personally lead your tour rather than having you visit when they’re focused on production work.
How long do tours and tastings take?
The complete experience typically runs about 45 minutes, including both the production tour and tasting. The founders enjoy talking about their process, so tours can run longer if you have lots of questions about distilling techniques or their specific approach.
Can I buy bottles to take home?
Yes, they sell bottles of their bourbon and rye whiskey when available, though inventory can be limited since they’re a small operation. It’s worth calling ahead if you’re specifically hoping to purchase bottles, as popular releases sometimes sell out quickly.
