ABOUT THIS DISTILLERY

Bonetree Distillery sits in an industrial stretch of Huntington Beach, about as far from stereotypical whiskey country as you can get. Founded by husband-and-wife team Mike and Jennifer Berman in 2018, this small-batch operation emerged from Mike’s background in craft brewing and a shared passion for creating something uniquely Californian. The couple converted a 2,400-square-foot warehouse space into their distillery, installing a custom 250-gallon copper still from Vendome Copper & Brass Works and focusing on whiskey, bourbon, and rye production with a distinctly West Coast approach. The Bermans didn’t stumble into distilling by accident. Mike spent years perfecting his craft, studying distillation techniques and experimenting with different grain bills before committing to the venture. Jennifer handles the business operations while Mike oversees production, creating what they call “grain-to-glass” spirits using locally sourced ingredients when possible. They age their whiskeys in new American oak barrels in Southern California’s warm climate, which accelerates the maturation process compared to traditional Kentucky aging. When you visit Bonetree, you’re stepping into a working distillery where production happens in full view. The space feels industrial but welcoming, with exposed concrete floors and metal fixtures softened by warm lighting and the rich aromas of fermenting grain and aging spirits. You can watch Mike work the still during production days, taste spirits straight from barrels during tours, and experience firsthand how a two-person operation creates award-winning whiskey just miles from the Pacific Ocean.

WHAT SETS THEM APART

Bonetree represents something genuinely different in American whiskey production—a grain-to-glass distillery operating in coastal Southern California where most people wouldn’t expect to find serious whiskey making. The warm Mediterranean climate means their spirits mature faster than traditional whiskey regions, creating unique flavor profiles in shorter time frames. Mike Berman’s brewing background influences his approach to fermentation, using techniques borrowed from craft beer production to create distinctive mash bills. Their location in Huntington Beach makes them one of the few craft whiskey operations in Orange County, and they’ve embraced their coastal identity rather than trying to mimic Kentucky or Tennessee traditions.

THE VISITOR EXPERIENCE

Tours at Bonetree feel personal because you’re likely meeting Mike or Jennifer directly—this isn’t a corporate operation with scripted guides. You’ll see their custom copper still up close, learn about their mash bill recipes, and understand how California’s climate affects aging. The tasting room occupies one corner of the production space, so you’re literally tasting spirits where they’re made. Mike often explains his brewing-influenced fermentation process and how he adapts traditional whiskey-making techniques for their coastal environment. The experience feels authentic because you’re watching a small family business in action, not touring a polished visitor center.

IS IT WORTH VISITING

If you’re interested in craft distilling or curious about how whiskey adapts to different climates, Bonetree offers something you won’t find at larger operations. The intimate scale means you get direct access to the people making the spirits, and the Southern California location makes it a unique stop for whiskey enthusiasts exploring beyond traditional bourbon country. However, don’t expect the polished tour experience of established distilleries—this is a working production facility first and tourist destination second. It’s perfect for spirits geeks who want to see small-batch production in action and taste how geography influences whiskey character.

⚠️ VISITING TIPS

Call ahead or check their website before visiting since tour availability depends on production schedules and the Bermans’ availability to host. The distillery is located in an industrial area, so GPS should get you there but don’t expect obvious signage from the street. Weekend visits often work better for tours since that’s when they’re most likely to have time for extended conversations about their process. Ask specifically about tasting spirits at different proof levels and ages to understand how their accelerated aging affects flavor development. Parking is available on-site, but the entrance might not be immediately obvious from the street level.

FREQUENTLY ASKED QUESTIONS

Bonetree Distillery — Visitor FAQ

Do I need to make a reservation to visit?
Yes, Bonetree operates by appointment only since it’s primarily a production facility run by Mike and Jennifer. Call ahead or check their website to schedule a tour and tasting when they’re available to host visitors.
How does aging whiskey in California differ from traditional regions?
Southern California’s warm climate accelerates the aging process, allowing spirits to develop complexity faster than in cooler regions like Kentucky. The consistent temperature means more interaction between whiskey and wood, creating unique flavor profiles in shorter time periods.
What makes Bonetree different from other craft distilleries?
Mike’s craft brewing background influences their fermentation process, and they’re one of the few grain-to-glass whiskey operations in Orange County. They embrace their coastal California identity rather than trying to replicate traditional whiskey regions, creating distinctly West Coast spirits.
