Bardenay Restaurant & Distillery sits on Grove Street in downtown Boise, claiming the distinction of being Idaho’s first distillery since Prohibition ended. Kevin Settles founded the operation in 2000, bringing together his vision of a restaurant and distillery under one roof—a concept that was pretty revolutionary at the time. The guy had restaurant experience but jumped into distilling because he saw an opportunity to create something completely different in Idaho’s dining scene. The downtown location houses both the production facility and a full restaurant, making it part dining destination, part spirits producer. They distill vodka, gin, rum, and whiskey on-site, with the stills visible from the restaurant floor so you can watch the process while you eat. Settles and his team built this as more than just a distillery—it’s designed as an entertainment venue where the spirits production is part of the show. The restaurant serves Northwest cuisine paired with their house-made spirits, and they’ve been refining both the food and the distilling operation for over two decades. What started as an experiment in combining dining with distilling has become a template that other operations have followed, but Bardenay was doing it first in Idaho.
