ABOUT THIS DISTILLERY

Historic Stillwater Warehouse Turned Craft Distillery

45th Parallel Distillery sits in downtown Stillwater on Water Street, bringing craft spirits to this historic St. Croix River town. Founded by Paul and Angie Wenta, the distillery opened in 2014 after Paul left his corporate career to pursue his passion for distilling. The couple transformed a 19th-century brick building into their production facility and tasting room, creating a warm industrial space where visitors can watch the distilling process through large windows. They focus on small-batch bourbon, rye, and vodka using locally-sourced grains when possible. The Wentas built their operation around a custom-made 500-liter copper still from Germany, which allows them to control every aspect of their distillation process. Paul handles the production side while Angie manages the business operations and visitor experience. Their philosophy centers on patience and traditional methods—they don’t rush their spirits to market, instead letting them develop proper character through careful aging and blending.

WHAT SETS THEM APART

Minnesota Grains German Copper Still

What sets 45th Parallel apart is their commitment to true small-batch production and Paul’s methodical approach to distilling. They produce only about 1,000 bottles per month, making them one of Minnesota’s smaller craft distilleries. Paul uses a grain-to-glass approach, sourcing corn and wheat from Minnesota farms within 100 miles of the distillery. Their copper pot still from Germany allows for precise cuts during distillation, and Paul makes these decisions by taste rather than automated systems. The distillery’s location in historic Stillwater adds character—the building dates to the 1880s and retains original brick walls and hardwood floors that create natural aging conditions for their barrels.

THE VISITOR EXPERIENCE

See the Still Meet the Distiller

You’ll enter through the original brick storefront into a tasting room that feels like a blend of industrial workshop and neighborhood bar. Large windows let you see directly into the production area where Paul often works the still, and he’s usually happy to explain what’s happening if you catch him during production days. Tastings happen at a reclaimed wood bar where Angie or staff walk you through their current offerings, explaining Paul’s distilling choices and the story behind each spirit. The space has about a dozen seats, so it feels intimate rather than crowded. You can smell the grain and oak from the production area, and on distilling days, the sweet aroma of corn mash fills the room.

IS IT WORTH VISITING

Real Small Batch Real People

This works best for visitors who appreciate true craft distilling and don’t need elaborate tours or entertainment. You’re getting an authentic small-batch experience where you can actually talk to the people making the spirits. Bourbon and rye enthusiasts will appreciate Paul’s traditional approach and attention to detail. The setting in historic Stillwater makes it easy to combine with other downtown activities. However, don’t expect large group accommodations or extensive food offerings—this is about the spirits and the craft. If you want to understand small-scale distilling and taste spirits made by someone who’s genuinely passionate about the process, it’s worth the visit.

⚠️ VISITING TIPS

Call ahead or check their social media for current hours since they sometimes adjust for production schedules. Parking can be tight on Water Street, but there’s usually street parking within a block or two. Visit on weekends for the best chance to catch Paul during production and get insights into the distilling process. Ask about their aging process and barrel program—Paul has strong opinions about Minnesota’s climate effects on aging. If you’re serious about bourbon or rye, ask to try their barrel-strength offerings. Don’t expect a long formal tour, but the open layout means you can see the entire operation from the tasting room.
