ABOUT THIS DISTILLERY

A Working Distillery Where Production Never Stops

1827 Spirits sits in the heart of Vidalia, Louisiana, founded by husband-and-wife team Chris and Stephanie Daly who opened their doors in 2020. The name honors Louisiana’s statehood year, and this small-batch operation focuses on producing handcrafted rum, bourbon, and specialty spirits in a converted commercial building on Carter Street. Chris, a former petroleum engineer, and Stephanie, who handled the business side, decided to dive into distilling after years of home brewing and a shared fascination with Louisiana’s rich distilling heritage. The Dalys spent nearly three years navigating Louisiana’s complex distilling regulations and building out their 2,500-square-foot facility with a custom 500-gallon copper still imported from Kentucky. They’re hands-on owners who handle everything from mashing to bottling, often working late into the evening to perfect their recipes. The operation reflects their engineering background—everything’s precisely measured and documented, but there’s still room for experimentation with local sugarcane and Louisiana rice in their mash bills. Visitors step into a working distillery where the smell of fermenting grains hits immediately, and you can watch the Dalys or their small team actually making spirits rather than just talking about it. The tasting room occupies one corner of the production space, so you’re literally surrounded by fermentation tanks and aging barrels while sampling their products. It’s intimate enough that you’ll probably end up chatting directly with Chris about grain sourcing or Stephanie about their distribution challenges—this isn’t a polished corporate experience, but that’s exactly the point.

WHAT SETS THEM APART

Louisiana Rice and Sugarcane In Every Bottle

What sets 1827 Spirits apart is their commitment to using Louisiana ingredients wherever possible, sourcing sugarcane from local farms within a 50-mile radius and incorporating Louisiana rice into several of their mash bills. Chris’s engineering background shows in their meticulous approach to consistency—they track every variable from humidity to fermentation temperature in detailed logs that would make a scientist proud. They’re also one of the few Louisiana distilleries experimenting with rum production alongside traditional American whiskeys, taking advantage of the state’s sugarcane heritage in ways most craft distilleries ignore.

THE VISITOR EXPERIENCE

No Theatrics Just Real Distilling in Action

You’ll walk into an active production facility where the fermentation tanks bubble away just feet from the tasting bar, and either Chris or Stephanie will likely be the one pouring your samples while explaining their process in detail. The space feels more like a working brewery than a polished tasting room—concrete floors, exposed ductwork, and the constant hum of equipment create an authentic industrial vibe. Tastings happen at a simple wooden bar while you watch (and smell) the actual distillation process happening behind you, and the owners genuinely enjoy talking shop about everything from grain bills to barrel aging.

IS IT WORTH VISITING

For Spirit Nerds Absolutely Worth It

If you’re into craft spirits and want to see how a true small-batch operation works, 1827 Spirits delivers an authentic behind-the-scenes experience that larger distilleries can’t match. You’re not getting theatrical tours or Instagram-perfect tasting rooms, but you will get to taste spirits made by people who are clearly passionate about their craft and happy to share detailed knowledge about their process. It’s perfect for spirits enthusiasts who prefer substance over style, though casual tourists looking for a polished entertainment experience might find it too bare-bones.

⚠️ VISITING TIPS

Call ahead or check their Facebook page before visiting since hours can be unpredictable when they’re in production mode—small operations sometimes close unexpectedly for equipment maintenance or ingredient deliveries. Ask Chris about their rice bourbon if you’re curious about unique Louisiana ingredients, and don’t be shy about questions regarding their distillation process since he genuinely enjoys the technical discussions. Parking is easy with several spots right in front of the building, and GPS will get you there without issues.

FREQUENTLY ASKED QUESTIONS

1827 Spirits — Visitor FAQ

Do I need to make an appointment to visit?
While appointments aren’t required, it’s smart to call ahead or check their Facebook page since they sometimes close unexpectedly for production work. They’re a two-person operation, so if they’re busy with a big distillation run, you might find them closed during posted hours.
What makes their bourbon different from other craft distilleries?
They use Louisiana rice in their bourbon mash bill, which adds a subtle sweetness you won’t find in traditional corn-wheat-rye recipes. Chris sources the rice from local farms and treats it more like a brewing ingredient than a typical distilling grain, drawing on his background in fermentation science.
Can I buy bottles to take home?
Yes, they sell bottles of their current production runs on-site, though selection depends on what they have ready for sale. Since it’s small-batch production, some spirits might be sold out while others are still aging, so selection varies throughout the year.
