1827 Spirits sits in the heart of Vidalia, Louisiana, founded by husband-and-wife team Chris and Stephanie Daly who opened their doors in 2020. The name honors Louisiana’s statehood year, and this small-batch operation focuses on producing handcrafted rum, bourbon, and specialty spirits in a converted commercial building on Carter Street. Chris, a former petroleum engineer, and Stephanie, who handled the business side, decided to dive into distilling after years of home brewing and a shared fascination with Louisiana’s rich distilling heritage.
The Dalys spent nearly three years navigating Louisiana’s complex distilling regulations and building out their 2,500-square-foot facility with a custom 500-gallon copper still imported from Kentucky. They’re hands-on owners who handle everything from mashing to bottling, often working late into the evening to perfect their recipes. The operation reflects their engineering background—everything’s precisely measured and documented, but there’s still room for experimentation with local sugarcane and Louisiana rice in their mash bills.
